Mean, Clean Strawberry Cheesecake Bites {Paleo, Vegan, Gluten Free}

As requested from the birthday boy, I made strawberry cheesecake for my husband’s birthday last night. It was going to be perfect, but as I was carrying the cake to him, the cute paper banner I had decorated with fell on top of all 33 candles and the cake caught on FIRE. My beautiful cheesecake instantly became a globby mess of ashes and blue wax as Will sprinted to open the doors and air out our apartment. He hugged me, told me it looked perfect, and happily ate it anyways (aw). Thankfully, I have successfully made my paleo Strawberry Cheesecake Bites before, so Will knows I can whip up a good dessert. Because I am lactose intolerant, cheesecake isn’t an option for me, which is why I came up with this easy, lactose-free recipe several months ago.

For those who don’t know, my dad is an organic prune farmer (yes, one of the <2% who still farms in the U.S.). I’m very thankful that I grew up eating fresh, California-grown fruit and veggies because of my family, and I’m just as thankful that I married someone who loves and supports my healthy eating habits. We love to find nutritious alternatives to indulgent, not-so-healthy treats, and the more fruit and vegetables we can incorporate, the better! My vegan, gluten-free, and paleo Strawberry Cheesecake Bites are one of our favorite “clean” desserts.

Mean, Clean Strawberry Cheesecake Bites {Paleo, Vegan, Gluten Free}
Serves: 6

  • 1 c. soaked cashews
  • 1 c. frozen strawberries (thaw for 30 min. before blending)
  • 3 tbsp. fresh lemon juice
  • 2 tbsp. melted Ghee (*can substitute coconut oil)
  • 2 tbsp. pure maple syrup
  • Dash of vanilla

Directions:

  • Soak cashews in water for one hour.
  • Combine everything but the strawberries in a high-powered blender.
  • Blend until creamy.
  • Add in strawberries and blend until smoothie-like consistency.
  • Pour into muffin/cupcake pan and freeze for one hour.
  • Take out of the freezer & enjoy!
